Got these massive cuts on sale at Lucky for what worked out to $2.24 per pound after sales tax. About a third normal price. Good Lord meat is expensive nowadays.
The granular stuff is a thick coat of salt & pepper. Yum!

Meat is always a loss-leader at the big retail groceries in the West. The meat sales run in cycles, and sometimes the cycles are driven by the weather events which can make the logistics of running a feedlot more difficult. When that happens, the ranchers will just send the beeves/swine off to market a bit sooner, saturating the market momentarily and driving the price down for a short while. This is what freezers are for, dude!
